Heidi Swanson posted a veggie burger where the veggie burger is the bun rather than the filling. A brilliant idea, I thought. Let's see if I can find the post. . . Ah, yes: http://www.101cookbooks.com/archives/001567.html

Found this on a recipe website, quite tasty, nice with a little bit of hot pepper mixed in, too! :)

1 (15 ounce) can kidney bean, drained, and rinsed
1/2 cup rolled oat
1/2 cup mushroom, finely chopped
1/4 cup onion, finely chopped
1 carrot, shredded
1/2 cup red bell pepper, chopped
1 clove garlic, minced
2 tablespoons tomato paste or ketchup
1/2 teaspoon salt
pepper, to taste

Directions

   1.

Throw all ingredients in food processor (or blender, if you dont have one).
   2.

Pulse (or blend) until coarsely chopped.
   3.

Chill mixture, then shape into four (4) 1/2-inch thick patties.
   4.

Now you can wrap and freeze them for later.
   5.

To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle).
   6.

You can do this in your broiler or on the grill.
