Sugar-Free Iced Tea with Mint

552A84A4-BF85-4FA1-A9B4-DB268A50C42A.jpgSpring has sprung in London and my thirst for hot tea gone out the door, along with my woolen underlayers and full-finger cycling gloves. Here’s a refreshing iced tea made with mint, orange and lemon. You can sweeten it with sugar or honey if you’d like, but I don’t think it needs it.

Iced Tea

Adapted from Debbie Owens’ Iced Tea.

6 bags or 3 heaping teaspoons of black tea
6 sprigs of fresh mint
1/2 orange, juiced
1/2 orange, sliced
1/2 lemon, sliced
lots of ice cubes

Bring 2 pints (1.2 liters) of water to a boil and add it to a teapot with the tea and mint. Brew for 15-20 minutes, then remove the tea-bags and mint and leave it to cool.

Put lots of ice into a glass jug and pour in the tea followed by the orange juice, orange slices and lemon slices. Stir thoroughly, and serve in glasses with more ice.

    Spring seems to be waxing and waning here doesn’t it? The weather in London is such a mystery to me…sigh. I LOVE iced tea though! Having a party soon, so this will most definitely be used! Thanks!
