I’m over my kidney infection of a couple weeks ago, but I’m left 4kg lighter and more than a little lethargic. This isn’t good weight loss folks – I swear it was all muscle. I’m blown away by the toll a relatively short-term illness can take on me. But on the plus side, I get to eat as much as I want as I try get my strength back and return to my old self. I’m also getting back into my exercise, but nothing too strenuous. Sunday morning I started with a swim, followed by an all-morning pumpkin pie baking marathon (it took all morning because I insist on making my own all-butter pastry shell – that stuff you buy in the grocery store is full of all kinds of weirdness – my pie must be pure!). I know it’s not the season for pumpkin pie, but who needs a season? This is comfort food at its best, especially when served with lots of whipped cream!

Breakfast
Crepes again
This time filled with cottage cheese and topped with fresh fruit and a little homemade blackberry syrup (i.e. homemade blackberry jam that never really set properly).

I’m swimming again. It’s glorious.
Lunch
Black Bean and Spinach Quesadillas
Made with corn tortillas and served with guacamole, salady stuff, and some extra steamed spinach on the side.
Dinner
Tofu Stir Fry
Tim is learning how to make delicious stir fries from Mark Bittman’s How to Cook Everything Vegetarian.
Dessert
I made a pumpkin pie Sunday morning. A family favorite. If only I bought whipping cream instead of single cream. But no worries, it was still awesome.

@maris – Pumpkin pie actually seems like the perfect summer food because it’s eaten chilled. So why not have pumpkin pie in May? Or June, July, etc… Tim gets credit for the stir fry. He is ROCKING the tofu.
@Tim – I KNOW. Surprised me when we replaced the battery on the scale. I’ve put some back on now but it’s taking a while. More pie, please.
@Tanya – Food is my religion (is that blasphemous?). And yes, I’m feeling lots better. =)
