Breakfast
Bircher Muesli with Bananas and Rooibos Tea
Swim
An easy 1000 meters in the slow lane.
Snack
Yogurt, Bananas, Sunflower and Pumpkin Seeds (and a sip of Tim’s chocolate protein shake)
Lunch
Swiss Chard and Chickpeas with Vegan Cornbread and Avocado
Another marvelous thrown-together meal. The chickpeas and chard were sauteed with leeks, garlic, oregano, thyme, red pepper flakes, and a fresh tomato. It took about 20 minutes from start to finish, about the time it took to reheat the frozen cornbread in the oven. I like avocado on my cornbread – it’s nature’s butter!
Cycle
12mi round trip to work meeting and back. This definitely stoked my internal fires…
Snack
I had an apple at the meeting and a few almonds, then a grapefruit when I got home. Ravenous! Later, Tim took me out for a pint to celebrate my asking for a raise (well, that wasn’t really the excuse he gave me, but it was the excuse I gave myself in my internal dialogue). I had my usual: a half pint of Hoegaarden.
Dinner
Shorabat Addas and a Mixed Salad
This soup rules. How good is it? Tim went back THREE times for a refill (I went back once). My mom shared this with me, and I emailed her right after dinner to tell her how good it was. Her response sums it up nicely:
Monica, this is such a flavorful soup, the most wonderful combination of spices. For such a humble soup, it completely takes you by surprise… spoonful after spoonful, bowlful after bowlful! One of my VERY favorite soups… I’m glad you’re enjoying it! (And Tim too!)
PLUS, it’s super nutritious and great workout recovery food, full of happy protein, complex carbs, fiber, and very low in fat. It’s just lentils, onions, garlic, spices and lemon juice. Once again, real food that’s healthy because it’s supposed to be. I love this stuff!
BTW, I didn’t end up drinking the wine shown in the picture. I’d had enough after the half pint.

Sagan, I wouldn’t call it creamy, as it doesn’t really have any cream or much oil in it. It has the consistency of a soupy dal, if that makes any sense?

Rebecca, thank you for the link – that quiche sounds PHENOMENAL. I love what you’ve done with the recipe! I never thought of including beans in a quiche before. Inspiring. And that apple wood smoked cheese? Pure genius.
I love the sound of your savoury pastry crust, too. I’ve been experimenting here and there with pastry but I still have a lot to learn. Never tried it with whole wheat flour, but I like the sound of that! Especially for something like a quiche where I can see the nuttiness of the whole wheat going well with the veggie-tastic filling.
