Wanted: A Veggie Burger that isn’t a Mush Burger

I just posted this request on the forums at 101 Cookbooks, but thought I’d throw it out to our readers with their enviable big brains.

Veggie Burger at BioboaEvery time I’ve tried to make my own veggie burgers, they always come out mushy. This weekend I tried out a recipe for Black Bean Sweet Potato Burgers and although they tasted okay (albeit a little sweet), they were yet another beany mush fest. I want something that holds it shape, kinda like Boca Burgers or Morningstar Farms Black Bean Burgers (I hate to compare my desires to something that comes out of a box, but there you have it).

If you have any tips, I want to hear them! Post them in the comments! If you post a recipe, I promise I’ll try it. Maybe I’ll even turn this into an impromptu veggie burger recipe contest. What should the prize be? Beyond my endless gratitude? I’ll think that one over and get back to you.

In the meantime, help me master the mush! It’s grillin’ season and I need something that won’t fall threw the grill grates!

    Found this on a recipe website, quite tasty, nice with a little bit of hot pepper mixed in, too! 🙂

    1 (15 ounce) can kidney bean, drained,and rinsed
    1/2 cup rolled oat
    1/2 cup mushroom, finely chopped
    1/4 cup onion, finely chopped
    1 carrot, shredded
    1/2 cup red bell pepper, chopped
    1 clove garlic, minced
    2 tablespoons tomato paste or ketchup
    1/2 teaspoon salt
    pepper, to taste

    Directions

    1.

    Throw all ingredients in food processor (or blender, if you dont have one).
    2.

    Pulse (or blend) until coarsely chopped.
    3.

    Chill mixture, then shape into four (4) 1/2-inch thick patties.
    4.

    Now you can wrap and freeze them for later.
    5.

    To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle).
    6.

    You can do this in your broiler or on the grill.
