It’s been a busy week but I’m trying to get back into the swing of things with my daily food and exercise posts. The swirl of activity has me rejuvenated. Last weekend, we had friends over for our first in a series of mini housewarming parties at our new place on the farm. It was a great weekend, involving lots of food and very little to write anything about it.
Our last guest left on Monday, and I returned to London with him for a couple days of work where my diet was totally dependent on my gracious hosts. Luckily, I work with people who appreciate good food as much as I do so it wasn’t a problem, thought I WAS shy about taking pictures.
On the whole fitness side of things (after all, this blog is supposed to be about food AND fitness, though the latter usually takes authority), I’ve been doing a lot of walking lately, particularly the last two days in London. It’s left me a bit stiff and sore so on Wednesday I took a day off from my daily walking routine, which was just as well because it was one of those cold rainy days in England that are perfect for hiding indoors in sweatpants.

Stretches, Push-Ups and Sit-Ups
Feeling really stiff for some reason. Probably due to lots of walking in London the two days prior. Spent a good 15 minutes just stretching, focussing on my legs and lower back. Then some sit-ups and push-ups as “planned”.
Breakfast
Apple-filled Buckwheat Crepes with Soy Yogurt “Cheese”
Recipes:
Vegan buckwheat crepes
Soy yogurt “cheese”
Lunch
Smoked Tofu Sandwich with Salad
The sandwich was awesomely delicious: hummus, tomato, cucumber, lettuce and smoked tofu. The salad, by contrast, was pretty basic: leaves, tomato, onion, carrot, balsamic vinaigrette and toasted sunflower seeds.
Snack
Smoked tofu mini-sandwich and an orange
Another halve sandwich like the one pictured above. No picture. Tsk tsk.
Dinner
Pizza with roasted veggies and tomato salad
Grilled zucchini and eggplant have made for a decent cheese substitute in the past, so tonight I tried grilled marrow. It was decent, but the crust was only average. I think it needed to rise longer.

Mmm, your food looks amazing – especially those crepes! I was going to say that I was excited to try and de-gluten the last 1/4 c. of flour your recipe calls for, but then you posted a link to bonafide gluten free crepes on that post! Thank you! Now, I will be able to make all my GF crepe dreams come true! 🙂

Hi Monica! Since you have a collection of amazing recipes I figured you’d be the right person to ask for a pesto recipe using pine nuts. Do you have any? That smoke tofu sandwich looks incredible too! The smoked tofu almost looked like smoked cheese – and I imagined smoked gouda (my favorite)!
Take care!
p.s. you still have to take a picture of the big window you had mentioned before 😀

Monica, that pizza is gorgeous! The secret to mine is: I bought it from Z Pizza. Hee hee.

Eve, let me know how the GF-free crepes go – I’m curious!
Katharina, try out Mark Bittman’s http://books.google.co.uk/books?id=gNAU05uZJ-MC&lpg=PA768&ots=G8saBPKkes&dq=pesto%20mark%20bittman&pg=PA768#v=onepage&q=&f=false“ rel=”nofollow”>pesto recipe – his uses pine nuts. I see he’s got a dill pesto on there, too… I might have to give that a try.
Mo, thanks for the pizza tip. I think I could learn a lot from Z. =)

I am impressed with all your food pictures. Does everything you eat look so pretty? 🙂
I have to buy some buckwheat flour, I’m craving those pancakes for a while now…

Trust me, lots of my food is a mess… and if they look pretty to start with, it usually doesn’t last very long! Especially with tacos… I always overfill them and they spill out all over my plate!
